Brisket Stir Fry

This is an old picture, but I’ve made this several times.

It’s another one of those “leftover/pantry” dinners.

You’ll need:

1/3 leftover small smoked brisket

1 large chopped zucchini, I’ve also used frozen

1/2 diced onion

2 cloves garlic, chopped

1 can of tomatoes, I’ve used plain or garlic and olive oil ones

1 cup hot cooked rice

Here’s what you do, cook your onions and garlic in a little olive oil, until the onions are transparent, then add your chopped zucchini. Cook for a few minutes then add the chopped brisket, cook for a few minutes, then add the canned tomatoes. Let it simmer a little while, season with salt and pepper. Sometimes I’ll put some cayenne or red pepper flakes for a kick. Not much though. I serve it over rice that’s been cooked in chicken broth.
